Req: recipes using smoked sausage

We have some really outstanding smoked sausage in Texas and I usually get one or two on every shopping trip. However, I'm sick to death of preparing it on the grill. Anyone got any recipes for preparing this differently?

Smoked Sausages = FUCKING YUM

They lend themselves not only to things like pizza, but a nice simple pasta of garlic, smoked sausage, fresh spinach, fresh thyme, olive oil and alil chicken stock and butter is pure heaven

I put smoked sausage in my marinara sauce for spaghetti ! :D

Oh one thing, I'm limited in what I can prepare because my gf has a nasty gluten allergy :( no pizza, no pasta, hell most every condiment has wheat in it. Rices and potatoes are pretty much my starch choices.

Pherr, I like your idea...would that be good over/along with say brown rice?

My favorite is Holmes Smokehouse sausage with pork and venison, unreal flavor :)

It'd rock in a risotto, there is a recipe in this forum somewhere, but I am on my gf's crappy dialup so I ain't searchin for it now :P
