Spinach dip - YUM!

People love to come over and have my spinach dip. If you're not a fan of spinach, you will be after trying this one out.


1 block of chopped spinach (I use 2 hand fulls of fresh spinach)
1 cup of chopped white onion
1 cup of cheese
1 chopped tomatoe
1 block of cream cheese


Place all the ingredients in a bowl, no need to mix them right away. Place in microvare for 4-5 minutes. Mix the ingredients together. Place in microwave for 2-3 more minutes. Serve with tortilla chips.

If you want to add to this, I would suggest 1 can of crab meat.

What kind of cheese would you recommend for that? Just says cheese up there, but there are a bazillion types of cheese =).

I'd go with jack or mozzerella...you could always toss in a bit of Parmesan if you want though...

mmm....feta or chevre would also be good if you like it a little more tart!

I make spinach dip from the recipe on the Knorr Vegetable Soup mix package!! It's yum.
