Amazing dish I ate the other night

I was at this Latino fusion restaurant The Red Onion (Houston only) and had this amazing bells-and-whistles type dish I just have to share.

It had two thick slices of eggplant fried in a batter closer to fried chicken (a bit flakey) than your usual bread-cumb fried eggplant you get in Italian restaurants. There was a slice of eggplant, a thick slice of tomato, a slice of Monterrey Jack cheese, a grilled chicken breast that was marinated in a jalapeno honey marinade, another eggplant slice, another tomato slice, another slice of Monterrey Jack.

Under this "tower" (it was pretty high) was that soft white Mexican cheese (I've only heard it called queso, but it may be really called queso blanco?). It had two sauces, a plain creamy sauce with no definable taste (but I've had it with Italian food before) and a red tomato-based sauce that had a slight salsa flavor to it. There was a cute little garnish of mixed greens wrapped in a long thin slice of zucchini (toothpicked together) and drizzled with Ranch dressing. It was placed on top of the chicken eggplant tower. The whole thing was sprinkled with yellow corn and red tortilla strips.

It tasted amazing and looked really cool.

That sounds delish. If I wind up interviewing for a med-school spot in Houston (I'm applying there), I'll check it out! I think that soft cheese you're thinking of is queso quesadilla. Good stuff!

It's could also be Queso Oaxaca, which is teh yum!
