This is the Italian Salsa verde, great on fish, meats and probably the best dipping sauce for fried oysters you will ever eat!
Salsa Verde
8 ea Anchovy Filets
2 shallot, minced
6 Tbsp XVOO
4 Tbsp finely chopped Italian Parsley
2 Tbsp drained, rinsed and chopped Capers
2 tsp white wine vinegar
2 tsp chopped tarragon
2 tsp chopped oregano
2 tsp chopped thyme
2 small clove garlic, minced
S&P
Soak the anchovy in cold water for 5 minutes and rinse, repeat 3 times. Drain and squeeze out moisture. Add the rest of the ingredients.
