I am surprised this isn't posted yet. I went and bought the extended version today. Seems a lot of people wanted this dvd set as Best Buy was almost out after only being open for an hour. Well, at least the pallet they had when I got there was almost empty.
It has been a long time since I saw it so I wasn't overly sure of all the parts added. Some were obvious but others weren't. All in all it is a very cool set.

It was mentioned in the DVD release thread sorta. Did you get the normal 4-disc one or the box set one? I was going to go today and get the box but... Her singing was ok. The extended version seems to include more of the songs and poetry that were in Tolkeins books, which is cool, gives it a richer feeling.
On a technical note, some of the compositing on Gollum was pretty bad watching it again. Specifically in the Dead Marshes. The highlights on Frodo and Sam are strong and crisp, whereas everything is all muted and smooth on Gollum. And don't try and tell me it's just how his skin is.. it's a bad lighting job in post!
