Every year a bunch of friends of mine and I get together for a pre Thanksgiving dinner. It usually consists of duck (since we all eat turkey a day or two later) and we all bring our own sides. I just made something up today from scratch and was actually amazed at how good it was. After a liberal amount of self congratulation I decided to post it here, and to start a thread for people to throw down their own side dish ideas, since I think single threads for mashed potatoes etc. is a bit excessive.
Zam's Cajun Fried Corn
Feeds 8
2 lbs fresh or frozen corn
8 oz applewood smoked bacon
2 shallots, diced
4 tbs butter
Pepper
Tony Chechere Creole Seasoning
Cook the bacon first, then set aside in paper towels. After dried out, chop up to desired length. With 8 oz bacon there shouldn't be too much grease left in the pan, so drain half of that. Add diced shallots and about 1 tbs butter and saute until shallots are brown. 3/4 the way through this process I added the chopped bacon to get a bit more flavor going. I also added a small amount of pepper at this point. Then after the shallots are good and brown, add the corn and rest of butter. Put on desired amount of spices and fry until done. I used shallots because I didn't feel like buying an entire onion and only using 1/3 of it, but you can deviate I suppose.
