Anyone have a Homemade BBQ Recipe

I did a quick search for a bbq and barbecue and only really looked on the first page, so I figured I'd make a topic. With a pretty awesome 3 day weekend here, I was planning on grilling out the next few days. Typically I just go for Kraft's Honey Roasted Garlic barbecue sauce and really like it, but wouldn't mind looking for something else.

Since this is a culinary arts thread, I'll post how I do my chicken now, nothing fancy but pretty much just rub some goya adobo seasoning, garlic powder, and a bit of ground cayenne pepper on the chicken. I usually go with Thighs because I like dark meat, boneless or with bone, doesn't matter. After putting the seasoning on I'll rub in some Olive Oil, but not much -- just enough to put a thin coat around all the pieces. Lastly I'll put some of the above mentioned bbq sauce on. That's about it, I'll heat the coals up in the grill and toss the chicken on, adding a few coats of bbq sauce through the course of cooking it.

Even if you don't have a homemade recipe for bbq sauce, it'd be nice to hear anyone else's ideas for their barbecues this weekend, as I imagine most people have them.

60 oz Crushed Tomatoes
1/2 c brown sugar
1/3 cup molasses
1/2 c sherry vinegar or apple cider
1/3 cup paprika
10 cloves garlic... chopped
1/4 c salt
3 Tbsp cup pepper
1/8 c hot sauce
1 1/2 Tbsp Cumin
3 Tbsp corriander
2 Tbsp dry mustard
2 Tbsp dry thyme
1 beer

Heat it up on the stove and smoke for 5 hours (which is how long a shoulder takes) stirring ever 30 mins or so

Works well with jerk-type meatses.

"Over the Barrel BBQ Sauce"

(yes, it is fucking great...sheesh)

Ingredients: (you may want to double or triple for lots of food)

1 Cup Ketchup
6 TBS Tamari Soy Sauce (or regular, if ya want)
4 Green Onions, minced
4 TBS Cider Vinegar
4 TBS Dark Brown Sugar
4 Allspice Berries, dried, or 1 tsp ground allspice
1/4 tsp Cinnamon
1/4 tsp Nutmeg
2 TBS Fresh Minced Ginger
4 Cloves Garlic
1-3 Habaneros - stemmed
2 OZ Dark Rum

Puree all ingredients except for rum in blender, food processor, etc.

Pour in saucepan and simmer until sauce coats wooden spoon or desired consistency.

Add rum and simmer for 10 more minutes give or take.

Fuckin' yum.

I buy the bottled stuff and "zest" it up with more garlic, hot sauce, honey, or whatever mixes best with what I'm grilling.

yes, I have messed with a few homemade recipes from family and friends...but I have found this to be a perfect replacement which allows me to drink and cook instead!

Yeah I typically just use the Kraft one that I mentioned earlier, I really like it, but I just wanted to try something new as well. I'll probably give Canelek's a shot because I have a good idea where to get most of the ingredients. I don't know where I'd get a cup of Molasses, unless that's just syrup, but I thought syrup was made from molasses(referring to Pherr's recipe).

I probably wouldn't do homemade BBQ sauce for every barbeque I do, because while I love the food tasting good, I try to balance the prep/cooking time with drinking time :)

Yup. Easy enough to find those ingredients...and if not *shrug* it will work just fine most likely. I like to use that on chicken wings after they have been cooked--makes for a nice glaze.

Now I have to run get a new grill grating. :)

There are three basic schools of BBQ sauce.

Carolina - Vinegar based.
Kansas City - Brown Sugar based.
Texas - Spicy!

I have a good solid base level recipe for each, but I'm in the midst of a wedding weekend, so I'll dig em up for you early this week.

You can try each, see what you like and tweak from there. :)

Also missing the Memphis style that's predominant in the deep south. Sweeter than Texas style, spicier than KC style. This is the only BBQ sauce in my book. Also, you can put BBQ sauce on grilled meats and it can be pretty tasty, but if it doesn't have a quarter inch smoke ring produced from a 6+ hour low & slow session in a wood smoker, it's not BBQ :)

So after having gone with Canelek's recipe, I just want to point out to anyone trying it themselves, it says 1 to 3 habaneros, you don't have to use 3 LOL. I wasn't really paying attention to the recipe and dropped 3 in not really thinking. I will say I do like spicy foods and typically take more heat than my friends, but that shit was fucking hot lol. I ended up doubling up quantities of everything else, not just because it was so hot, but also because I needed more anyway. Also, after cooking the chicken, it wasn't nearly as hot as before you put it on, if that makes sense. Thanks for the suggestion, I'll probably continue using it, I really liked it :)

Despite having a cover, my grill has become a hulk of rust (got blown over a few times and enough water got in to wreck it). Time to get a new one, but I missed grilling this weekend.

Dude, hit up Carfagna's (on 161 off of I-71). They are running filets at 8.99/lb and the rest of their beef and pork are outrageously low priced this week.

Mine is pure KC sauce, made it for everyone at work on Memorial day and it rocked. First time I actually used a pork cushion instead of the whole shoulder... came out superior by far.
