I had to do it for a pyschology experiment once. It's basically to see how well you can follow the orders for that experiment, and whether the saying of the color and instead of word ends up confusing you and messing up your concentration.

They had me looking at a chart saying the colors instead of words for about 3 minutes straight, and as it went on, it was proving harder and harder to stay concentrated and say the color, and not the word.
