Spicy/Sweet Jerk Marinade/Sauce

So this is a creation of my own, loosely based on some jerk sauce recipes I've seen in the past. Make the sauce and use it for anything you think it'd be good with. Especially recommended with grilled food.

Ingredients:

8 or so hot peppers (habaneros or jalapenos or whatever-- should be spicy)
1/3 of a red onion or 1 or 2 shallots or a few scallions
Molasses, 1 or 2 tablespoons
Soy Sauce, 1 or 2 tablespoons
Dark Rum, a shot or so
Brown Sugar, 2+ tablespoons
Garlic, a handful of cloves
Ground allspice
Ground nutmeg
Cracked pepper
Ground cinammon
Ground hot peppers of some sort (chili powder, thai chili, cayenne, etc)
Salt
Anything else you want, to taste

To make:

1. Grind all spices in mortar and pestle or mix them up by hand.
2. Put all ingredients in food processor; turn on.

New, improved version:

1 whole red onion
1 small bunch scallions
2 shallots
3-4 jalapenos
1-2 habaneros
1 shot rum
dash soy sauce

Molasses
Brown Sugar

fresh thyme
grated nutmeg
grated pepper
other spices to taste

1. Peel and chop the onion and shallots, chop the scallions, chop the jalapenos (seeds IN) and the habaneros (seeds OUT). Wear latex gloves or otherwise protect your hands when you chop the hot peppers. If you don't, you'll get burning oil on your hands, and then you'll really be in trouble if you touch your eyes, or, god forbid, stick your hands down your pants.

2. Put all of the above in a blender, along with the rum and soy sauce, blend til smooth. It will make a green paste which will be very spicy and smell very pungent.

3. Add molasses and brown sugar. You'll have to taste it as you add to get the appropriate spicy/sweet blend. When you're done, the sauce should be a moderate brown color. Blend.

4. Add the spices. I typically add about half a supermarket package of fresh thyme, along with a substantial amount of grated nutmeg and cracked pepper. Add whatever else you want-- ginger, cloves, cinammon, etc. The soy sauce should give it enough salt. Blend.

That's it. It goes best on salmon. So, put a fillet of salmon in a pan, lightly brushed with olive oil, and cover it with sauce. HOOKERWHORESLUT a little more brown sugar on top. Bake in the oven at 350 until done.

Damn skippy.

Those both sound great! I have a Jamaican BBQ sauce in this forum somewhere that uses similar spices (and rum!).

I'll give this a try, thanks! I bet it works great with chicken.

It goes well with most anything, but I think it's best with salmon. It can also replace salsa-style sauces in some contexts-- it goes great with eggs, for instance.

The second recipe is better (and more precise) than the first.
