Post by Tegellan »

I am looking for cheesecake recipes, so if you have any please post them. I just ask you to keep themin fairly generic ingredients since i can't get all the american ingredients over here.

My wife makes a killer key lime cheesecake. If you think that sounds interesting, I'll see if I can find her recipe.

Got this one off the net. I'm pretty sure the wife adds a couple teaspoons lemon or lime juice instead of rind. The ones I've made have been from the recipe on the side of the cream cheese package. Even at it's most basic it's very good and nearly foolproof.

Preparation Time: 20 minutes
Difficulty: Easy

Ingredients:
24 oz cream cheese
1 1/2 cups sugar
3 eggs
2 teaspoons lemon rind
2 tablespoons butter
2 tablespoons sugar
3 cups crushed Graham Crackers

Cooking Instructions:
Mix Grahams, melted butter and sugar in a small bowl. Press mixture into a 9 inch pie pan. Bake at 350 degrees for 10 minutes.

Mix cream cheese, sugar eggs and lemon rind until smooth. Pour into baked graham cracker crust and bake in at 350 degrees for 50 minutes or until slightly jiggley in the middle when shook.

Cool before serving.
Serving Suggestions:
Cover with fruit toppings like blueberry or strawberry.

Thanks for recipe Aab, but what exactly is lemon rind?

It's the outside of the lemon, gives a nice bitter taste. There are handheld rinders but use could also use a fine cheesegrater I would imagine.

I'll look for the recipe when I get home tonight if she doesn't have it in her online cookbook.

I use a fine grater for it, works fine. I've seen it for sale dried as well, but never used it.
