oh crap, I never saw this. Sorry Akaran!

I'll post my recipes for peanut blossoms, uber chocolate chip cookies, hermits and spritz cookies later on today.

PS: All of which I have very successfully substituted gluten free all purpose flour for the real thing so as to make these for my gf.

1 egg
1/4 c. molasses
2 tsp. baking soda
1/4 tsp. salt
2 1/4 c. flour
2 tsp. cinnamon
1 1/2 tsp. ginger
1 1/2 tsp. cloves
1 c. raisins

Mix all ingredients together thoroughly. Press evenly over ungreased jelly roll pan or shape in rolls 1 inch in diameter on cookie sheet. Sprin.kle lightly with sugar. Bake 9 minutes at 375 degrees. The Hermits will look soft but they become chewy as they cool. When cool, cut in bars.

Buttery Spritz Cookies

Note: you need to have a cookie press to make these cookies. The press costs about ten dollars and can easily be bought at your nearby kitchen shop or Target (Wal-Mart has them too).

1 c. powdered sugar
1 c. margarine or butter, softened
1 egg
1 tsp vanilla
1/2 tsp almond extract
2 1/3 c. all purpose flour
1/2 tsp of salt
Colored sugar crystals
Sprin.kles

Heat oven to 400 degrees Fahrenheit. In a large bowl, combined powdered sugar and margarine, blend well. Stir in remaining ingredients; blend well.

Fill cookie press with a small amount of dough into desired shapes onto an ungreased cookie sheet. Here's where you can decorate the cookies with sprin.kles and colored sugar crystals. Bake at 400 degrees for 6-8 minutes or until set but not browned. Immediately remove from cookie sheet.

The Holy Grail of Cookiedom

Shortbread

1 pound unsalted butter
5 cups all-purpose flour
1 cup white sugar

Preheat oven to 350 degrees F (180 degrees C).

Cream butter and sugar with mixer. Add flour and mix with a wooden spoon. Use hands to thoroughly mix.

Press into a jelly roll pan. Prick to bottom all over with a fork being sure the fork hits the bottom and the pricks are close together.

Bake for 10 minutes. Reduce the heat to 300 and continue to bake for 40 minutes more. Wait 2 minutes then cut into finger size bars. Cool thoroughly in pan.

Makes about 72.
