Tome Kha gai (chix-coconut soup)

Tome Kha gai (chix-coconut soup)
1 Chix breast
2 thighs
4 stalks lemongrass
3 cans coconut milk
1 1/2 cup chicken stock
20 quarter siced slices of galanga (thai ginger)
15 whole peppercorns
10 Wild Lime leaves
1 cup drained, halved straw mushrooms
3 tbsp fish sauce
2 tbs lime juice
1 tsp minced cilantro
Ok, cut the chicken into bite sized peices off the bone, set aside and marinate in 1 tbsp fish sauce and the cilantro
Lemongrass- cut off the bottom and WHACK it flat, removing the woody peice in the middle and mince it FINE FINE FINE (I actually use a mini food processor)
Fry the lemongrass in alil oil, then add chicken stock, coconut milk, half the lime leaves, galanga, when it comes to a boil, ad the chix and reduce to a simmer, when the chix is done, add the mushrooms, remaining fish sauce, lime juice and the remaining lime leaves, cover for 45 seconds (just to steep the high notes in the lime leaves) and serve immediately

on santa rosa ave just past the defunct chrysler dealer up near 3rd... head south on SR ave on the right will be a pawn shop and oriental foods store... great place!

The last time I tried anything Thai with coconut milk it was some duck dish... and I couldnt get over the smell, or the taste, it was horrible... bad Thai place? or bad dish?.... Cause now I have this unrelenting fear of coconut milk....its after me...

80% of all curries, be they Thai or Indian are made with coconut milk... Unfortunatly it seems the place was closed when I went by last week so unless they are open when I try again this week I will just stock up next time I am back in Santa Rosa.
As to Ransure's bad experience, I would definatly try Thai food again if I were you. Just make sure to read reviews of anywhere you are going to try and find a place that is ranked very highly. I know some Thai places will have much better curries than other dishes and I am sure there are others that are the reverse so you probably just had a bad experience.
