The veggie burger poll got me curious. in addition, I never understood someone ordering a filet or tenderloin well when they are such good cuts because they are tender and tastiest rare. A dry aged strip well I can understand because of the marble, but a filet?

I have to agree... what's the point of ordering a nice cut of beef well done?? Just bring in a shoe lace, throw some steak sauce on it and gnaw on it for awhile.

Personally I love mine on the Medium rare - Rare side. I can understand up to medium (I know some people get freaked out out of the color of rarer meats) but anything above that for anything aside from hamburger or a roast makes no sense to me.

Medium rare is by far the best - but rare-rare is great too! (cooked 3 seconds on each side)

I declare this poll invalid. Where is the "Bloody as Hell" option? Ideally, the steak will actually moo when I cut into it.

A good chunk of tuna can be seared on both sides and I'm happy. For me beef needs to hit 140 in the middle and rest a few minutes.

Burgers - Medium-Well to Well, since the surface meat is ground into the rest of the meat which is where bacteria usually are.

Steaks - Medium-Rare to Medium, depending on the restaurant.

I voted the last option. I've grown to love a good rare steak. But i'm not dumb enough to eat rare anything/anywhere.

Depends on the beef. I like my hamburgers (and anything else with ground beef) pretty cooked. Steaks not so much.

Steaks/prime rib - rare to medium rare
Ground beef - Well done

For some reason, I cannot stand the texture of burgers unless they are cooked until there is absolutely 0 pink.

Steaks on the other hand...just run it through a warm room.

When it comes to steaks and such...I sooo miss living in southwest Kansas. They have a cool event in my hometown that is based on the "Beef Empire" called *drumroll* Beef Empire Days! The worst thing about being in the so-called Beef Empire was the smell though. The town was surrounded by ranches, feed lots, and beef packing plants. I remember taking some friends of mine up there to meet my family and they asked that I wake them when we were near (was about a 12 hour drive). I warned them that they would be able to wake up on their own. Once we were within about 10 miles of town, they woke up complaining about the stench. I used the local phrase that they smelled "Money."

Texas beef is good as well. I just miss having the beef from the immediate area. There aren't as many working ranches around Austin anymore. It was nice going into a restaurant and having them be able to tell you where the steaks came from. :)

I'm with the pack here... rare side of med rare on steaks but more time on the burgers.

What used to baffle me is at a former employer, we did a fair bit of business with some UK companies, and would get Scottish and English personnel over here at times doing sales trips/equipment installations/etc. You take these guys out for a dinner and without fail they'd order a steak med-well or well done... and then talk afterward about how they loved Canadian beef :roll: but over the course of a couple years we had 15-20 different people and all of them were the same way. I used to tease the ones I knew better about ordering Steak A La Nike but I was never able to convince any of them to try a steak any less cooked.

There are ranches like 30 minutes NW of town!

My grandfather's ranch is near Brownwood; we get our beef straight from his stock. From the field, to the butcher, to the house. Yum!

The trick is to stay out of supermarket butchers. Find a butcher, ask about the process. Where their beef comes from, how soon they get it, etc.

edit: I just wanted to add that i've used 'erroneous' in conversation 4 times today and it's only lunch time.

Yeah, I know there are some near here, but nowhere near the amount as were around where I was born, went to school,etc.. Hell, they even had postcards proclaiming that more head of cattle were slaughtered in a 60 mile radius than anywhere else in the world! We go to Longhorn Market most of the time since you can pretty much grab a whole cow if you want to. We usually get an assload of beef from there and have some huge bbq's on out my mom's land :p There are too many of the "chain" steakhouses around here. :(

Ill have to go with Well Done, but thats because i got a disease that triggers on too much read meat, and ill rather have a well done beef than not being able to walk, sleep or anything even on 600 mg ibuprofen :).

But if i didnt, i would go with medium rare.

That little cow would be great sliced ~3/4" thick and cooked over some very hot charcol until he just started to get brown the sizzly on the edges.

I'll never forget driving into Amarillo from downwind in Aug, you could smell it at 20 miles.

im on the fence. for a straight up steak, its medium rare all the way. however, if it is prime rib or pittsburgh style, i prefer rare.
