Before I begin I want to say that I will continue playing the game because it is still fun for me despite these failings that annoy me. That said, here are something things that really annoy me.
Weather: The world is constantly the same without weather. An occasional rain storm would be cool or even snow or wind or how about a simple overcast sky?
No Surname: Why not? Seems kind of pathetic that you can't have a last name for your character. This somehow make character developement even more trivial than it already is by not having it.
Night time: It is damn near as bright at night as it is during the day. Remember the days of running through Kithicor at night? That was fun.
Duplicate buildings/caves: You go into the Dorf mine building in South Barrens and you will find the exact layout for the Dorf area in Hillsbrad. You go into an ogre cave here and find the same lay out over there. This is lazy in my opinion.
Druid Forms: (just cause I am a druid) No model difference between Bear and Dire Bear. Travel Form looks Identical for both Cows and Elves. Where is the creativity?
Mobs: Same model just made larger as they get tougher. Rather gay. Once again lack of creativity.
I won't even get into the people issues. These are just asthetic gripes. Some that would make the immersion into the game so much better if they were to be changed. As I find more I'll add to the list.

Travel form was apparently just a placeholder for an upcoming model. The Blizz CS rep said that with everythign else that needs to be done, it's unfortunately a low priority item.
Weather will be upcoming as well.
Nighttime/Daytime - I agree with you here. there are some areas of the world where nighttime is really nice to look at and some others where it's barely noticable.

Just wait! I'm sure a lot more goodness is still yet to be added to WoW.
Also, be careful what you wish for...remember the rain in the Karanas? I don't miss that at all! I wouldn't mid seeing white conditions in Dun Morogh every now and then
Also...does anyone else find it strange that one goes from a cold, dark forest to hot, humid jungle just by crossing the bridge from Duskwood to STV?

I'll answer in a point-by-point basis.

No idea on their stance on this one. Personally I don't care. If they add it in I want an option to turn it off from my display. Agreed. I wish night time felt like night time. I know that they on purpose made the dusk/dawn time longer than normal just because they were in love with the visuals of it. Once again agreed. They've, in the past, revamped several of these microdungeons with new layouts. Hopefully they'll do more. Travel form should be a bird >< So what if you can't actually "fly" with it, it'd just be great. Hello storm crows from WC3? Dire Bear should look a little more beefed up. Just as every other MMO (hell, even most single player games) re-use NPC models over and over with new skins or different sizes. You don't really have a leg to stand on with this one.
