Can post attachments now - you might need to zip/rar the file not sure if new one allows .doc's I'll work on that later!

bah - I forgot that I haven't reinstalled Acrobat since wiping this machine, and I seem to have misplaced my install CD & Key. I'll track them down and post the PDF later if anyone cares. Here it is in Word Document format (ZIPed up) for now...

What exactly are Risotto "Bombs"?...

btw is Raisin mispelled in the scallopine? or are you serving golden reasons...:)

Hahaha damn spelling is not my strong point, too much french class growing up!

Risotto Bombs are kinda simple, really yummy. Basically you make risotto, a good cheesy risotto to the point where it is just done, then lay it out thin on a sheetpan and crash cool it. then cut cubes of, in this case, aged provolone (mozz or other good melting cheeses work here) and some, mind you this part is totally optional, oxtail (or other meat) ragu (chilled) and make balls out of it, with the risotto surrounding the cheese and meat mixture. Then bread em into something resembling a crab cake (think squished round thing no more then 3/4" high but like 2 1/2" across) and deep fry until a deep golden brown... they are known as Bombas because of the explosion of flavor and the big mess it makes out of your plate.
