Request: omlet recipe

Anyone have any good recipies for omlets?

Ermmm I can't say that I would ever use a recipe for an omelet...Omelets are in my kitchen always a what's handy affair for me...And sort of anything is fair game...

Beat eggs, put in a non stick pan. Add whatever you happen to have in the fridge. Salt and pepper to taste.

I did see a show with this guy who is an omlette expert and pretty much all I gleaned from it is omlette should be cooked on very high heat and cooked quickly. He differentiated them from scrambled eggs which should be cooked at a medium heat and cooked longer. Other than than, there isn't much to making an omlette.

Actually I was gunning more for what you guys liked to put in your omlets as favorite ingredients..

I usually toss in an onion, some bacon, and some cheese of varying kinds.

Chili, cheese and onions...

Tomato, green onion, black olives, avacado, salsa and cheese...

Ham, onion, bell pepper...

pretty much anything in your fridge.

and yes, asparagus is yum in an omelet! :D
