Request - BBQ Chicken Marianade
Hey all, Im looking for a good recipie for BBQ chicken... tried a few Ive found on the net with vinegar based marianades and using store bought sauces... and the results are just alright... I want a great recipe to try

Aight I'll put up a few I use when I want to grill some chicken.
Jerk Chicken
12 green onions, chopped
2 onion, chopped
2 jalapeno pepper, seeded and minced
1 1/2 cup soy sauce
1 cup distilled white vinegar
1/2 cup peanut oil
1/4 cup ginger root, chopped
4 tbsp brown sugar
2 tbsp chopped fresh thyme
1 tsp ground cloves
1 tsp ground nutmeg
1 tsp ground allspice
juice of 1 lime
Use this for Chicken or Pork Jerk...Marinate refrigerated at least 8 hours

1 cup Canola Oil
2 tbsp minced garlic
1/2 cup dry white wine
Juice of 1 lemon
4 tbsp brown sugar
1/2 cup finely minced onion
1/4 cup finely minced bell pepper
1/4 cup finely minced celery
1 tsp paprika
1/2 tsp crushed dried rosemary
1/2 tsp crushed dried oregano
(Basically this is Italian Dressing + Brown Sugar and White Wine)
Again Marinate refrigerated at least 8 hours

Meat Rub
1/4 cup salt
1/4 cup sugar
1/4 cup brown sugar
1/4 cup ground cumin
1/4 cup chili powder
1/4 cup freshly cracked black pepper
1 tbsp cayenne pepper
1 tbsp garlic powder
1/2 cup paprika
For Beef ( 1 tbsp dried oregano, crushed to powder)
For Chicken ( 1 tbsp dried rosemary, 1 tbsp thyme crushed to powder)
For Pork (1 tbsp sage, 1 tbsp rosemary, crushed to powder)
I usually apply a rub 3 days before smoking the meat.

1/2 cup brown sugar
1/2 cup Worcestershire sauce
1/4 cup apple cider vinegar
1/4 cup molasses
1/4 cup finely minced onion
2 tbsp prepared mustard
1 tbsp garlic powder
1 tsp salt
1 tsp Tabasco
Combine all ingredients in a medium sauce pan over medium-low heat Mix well and warm through. Cool before use. Can be stored in refrigerator.
This is pretty much a brush and serving sauce. Typically I use the chicken marinade above for marinade and as a brush while cooking over fairly low heat. Then increase the heat after a few turnings and use this sauce as a brush for the last couple of turns.

I grew up in a small town in which the volunteer firemen would have a chicken cookout every major summer holiday (Mother's Day, Father's Day, 4th July, etc). This is their recipe cut down in size and I must say, it is wonderful!

My husband lived in Binghamton/Ithaca for quite a few years and got hooked on spiedies! I've seen other company's spiedies marinades in the store but they are not as good! Luckily, Lupo's does ordering over the internet!
If you are ever in the Binghampton area, I highly recommend stopping in here for lunch!
