Request: Quesedillas

I'm addicted to Taco Bell's chicken Quesedilla's. Anyone have a good receipe for something similar I can make at home? I'm drooling right now just thinking about them. =(

Also need to know what to make them in.. do I need a special device or can I just fry them up in a pan?!

I make quesadilla's in my George Foreman grill - toasts them up perfectly.

I grill the chicken up in advance (either on the george foreman or on my bbq outside) - then slice it up, put it in a tortilla, add grated cheese, fold and press in the grill. I leave it in until the cheese melts and the tortilla starts to brown (starts to crisp on the edges). You don't need to flip it in the George Foreman grill because it grills both sides.

I like the green taco sauce to dip.

P.S. - You can make them in a large frying pan or skillet, and just flip it halfway through the melting to get the tortilla browned evenly on both sides.

What about that yummy sauce they put on the Taco Bell Quesedillas tho? That shit is gooooood.

My wife got me a quesadilla maker for Christmas, but the damn thing is SERIOUSLY impossible to clean. I avoid it for that reason alone - you can't put it in the sink because it's an electric appliance and it's impossible to get all the overrun melted cheese/sauce/etc off because of the eleventy-billion nooks and crannies on it.

Also it has these wedges in the mold so that it breaks into pie shaped pieces, subsequently they come out like little pillows. I really just want them to be Taco Bell style flat. I'd get a George Foreman Grill but I have absolutely no room for it.

I make 'em in a frying pan usually. If I just want a quick snack they come out decent in the microwave, not quite the same though :)

Tortilla, cheese, salsa + any interesting leftovers in the fridge almost always comes out good.

When I make them I get Tortilla's, ground beef, cheese, tomatos, and Chi Chi's fiesta taco seasoning.
I like the Chi Chi's fiesta seasoning because it has a good taste. It's not that plain red powder crap. You can see pieces of peppers and onions in it.

I get the meat ready then I use a large skillet.

Toss in a tortilla, shreded cheese, meat, tomatos, shreded cheese, tortilla.

Cook it like that for a while till the bottom tortilla gets crispy then flip it and cook the other side. I cut them with a pizza cutter.

The secret to how I flip them is I put a paper paper face down on top of my skillet and then flip the whole skillet over. Then I just slide it from the paper plate back into the skillet. Makes it easy to flip and keeps it from making a mess when you do.

Chicken (grilled), salsa, 50/50 cheese, flour tortilla. Pan-fry until golden brown. Thanks for the Foreman tip, never thought of that.

There is much better as others have mentioned here. I think the mixture they use is basically melted jack.

Can't help you with the Taco Bell stuff... but.... these are much better:

Jalepeno Quesadillas

2 Fresh Jalepenos
4 Large Flour Tortillas
Butter for greasing
1 cup Mild Cheddar cheese
1 cup Monterrey Jack cheese
Your favorite salsa

Finely chop 2 de-veined and de-seeded jalepenos, set aside.

Shred mild cheddar and Monterrey Jack cheeses into bowl, set aside

Place large(12" or so) non-stick frying pan over medium heat

With stick of butter, lightly coat 1 side of each tortilla

Place tortilla, butter side down, on in the pan

Immediately add 1/2 cup cheddar and 1/2 cup Jack cheeses

HOOKERWHORESLUT 1/2 of your jalepeno over the cheese

When cheese starts to melt and the bottom of the tortilla starts to brown, place the other tortilla, butter side up, over the cheese.

Press down lightly so the new tortilla sticks to the cheese and flip it(much easier with larger pan and large spatula)

Cook until the bottom is browned.

Repeat with other ingredients to make second quesadilla

Servings: 2

NOTE: Add cooked taco meat before you flip it for yummy cheeseburger quesadilla! :D

I made some using that recipe linked above, and it was pretty close. The sauce wasn't exact, but it was still very very good.
