Oysters Rockefeller

Ingredients:

Two bunches fresh spinach, well washed and chopped
1 cup finely chopped celery
3/4 cups chopped scallions (green onions)
1/2 head finely chopped lettuce
1/2 cup finely chopped parsely
3/4 stick sweet butter (unsalted)
1/4 cup olive oil
1/4 cup water
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon of Tabasco Sauce
Juice of 1 lemon
2 Tablespoons Worchestershire Sauce
2 ounce tube of anchovy paste
1/4 cup toasted breadcrumbs
2 tablespoons cream
Absinthe or an Anise flavoring to taste
4 dozen oysters on the half shell
A bed of rock salt in a roasting pan
(if you cant get fresh oysters, don't make this)

Instructions:

Alrighty...Place spinach, celery, scallions, lettuce, and parsley into a saucepan containing the butter, oil, water, salt, pepper, and a dash of Tabasco...Simmer this over low heat for an hour adding water as necessary to prevent scorching...Add the lemon juice, Tabasco, worchestershire sauce, and anchoy paste...Simmer a bit longer and blend in the breadcrumbs and cream...Refrigerate until ready to use at least until it has chilled (this mixture may also be frozen at this point and saved for another day)...

When ready to use, stir in the Absinthe to taste...

Drain the oysters and place the shells (open side up please) on a bed of rock salt...Place this pan in a 400 degree F oven for about 15 minutes to preheat the shells...Place an oyster on each of the shells and top with chilled mixture...Return to 400 degree oven for fifteen minutes...Then place under the broiler for short time, about 3 minutes, watching carefully to avoid burning...

These are fantastic as hors d' oeuvres or accompanying brunch..
