This recipe is easily halved if you don't have to feed quite so many people. Serve with your favorite pasta, if desired.
2 eggs, beaten
1 cup grated Parmesan cheese
7oz seasoned bread crumbs
6 skinless, boneless chicken breast halves
1 tbsp olive oil
12oz pasta sauce
6 slices mozzarella cheese
Salt to taste
Preheat oven to 350 degrees.
Pour beaten eggs into a shallow dish or bowl. In a separate dish, mix together the Parmesan cheese and bread crumbs. Dip the chicken breasts first into beaten egg, then into bread crumb mixture until coated on both sides. Season with salt, to your taste.
In a large skillet, heat oil over medium high heat. Add chicken and saute 5 to 6 minutes on each side, or until chicken is cooked through and juices run clear. (note: After 2-3 minutes, you may want to check the cooking side of the chicken, as the coating has a tendency to brown quickly. If it is browning too quickly and the chicken hasn't had enough time to cook through, reduce heat to medium.)
Pour tomato sauce into a lightly greased 9x13 inch baking dish. Add chicken. Bake for 20 mins. Remove chicken from oven and lay a slice of mozzarella cheese over each breast. Put chicken back into oven and bake for an additional 5 minutes, or until cheese is completely melted.
