Looking for a specific Mexican Lasagna recipe

Post by Vetiria »

I can't remember everything that was in it. I had a Mexican lasagna a long time ago and it was excellent. It was made of hamburger, taco shells, olives, a couple different types of cheeses, and other stuff I can't remember.

I'd donate 10k VV's if someone would be interested in finding the recipe :)

Well i know my wife makes what she calls enchilda pie..

basically its everything you'd find in an enchilda and using corn tortillas layering it like a lasagna..

basic ingredients are a

corn tortilla's
hamburger
chili powder, cumin (this is the secret to mexican food), we use a belend of pepper spice that has like 6 different peppers in it.
enchilda sauce make your own if you can.
whatever cheese you want.. we usually throw in jack, colby, cheddar and a little mozeralla.
onions and garlic of course..

Basically you brown the meat with the onions and garlic.. season it up with whatever spices you want. dump the enchilada sauce in then just start layering the tortilla's with the meat and the cheese..

*edit* if you can find it for the heat add in 2 or 3 Chipotle peppers (basically a smoked jalapeno)
