Not sure how "authentic" this is, but it is yum. This was the second time making it...had made some shrimp fresh rolls for a potluck and it was very popular. I think there is a vegetarian fish sauce out there somewhere, but not positive.
1 cup dry-roasted peanuts
1/3 cup water
1 tsp Dark Soy sauce (Tamari)
2 Tbsp brown sugar
2 Tbsp fish sauce
½ tsp tamarind paste
1 Tbsp chili sauce (Hong Foy Foods makes a good one) OR 2-4 fresh Thai chilies
Place all in blender or food processor and process until smooth. If too salty, add a squeeze of lime. Add more fish sauce for additional saltiness.

Even less authentic Kale with Peanut Sauce:
Heat up a cup or so of vegetable broth in a large pot. Throw in maybe 6 tablespoons of smooth peanut butter, a little bit of brown sugar, salt, and crushed red pepper flakes. Slowly add 2 pounds of kale, allowing it to simmer/steam, stirring as you go. Eat.

Hmm. I like the look of both.
I think for my next iteration, I will add ginger, lemongrass and garlic.
Also more chiles.
Maybe a splash of coconut milk? Probably not. Already a ton of flavors cavorting about.
