4 medium potatoes, diced
3 carrots, diced
1 onion, diced
2 cloves garlic
4 cups water
2 chicken or beef boullion cubes
5 Tbsp vegetable oil
1/4 cup flour
4 Tbsp curry powder
1 tsp chili powder
2 tsp salt (or to taste)
2 cups short grain rice
1) In a large pot, heat 2 Tbsp of veg oil. Saute onion and garlic until softened.
2) Add the ground beef and cook untill it is no longer pink.
3) Add the carrots and potatoes, stir a few times and then add the water and boullion.
4) Bring to a boil, and simmer for 15-20 mins.
5) While the meat is cooking, make a roux out of the remaining 3 Tbsp oil and the flour, heat oil in a medium skillet untill "shimmering" (means just about smoking hot). Over a low-medium heat, add flour and stir, cooking until the flour is blended and takes on a golden hue.
6) Add curry powder and chili powder, Useing a WOODEN spoon (otherwize the plastic ones will melt lol) blend it into the roux. The mixture WILL BE POWDERY AND DRY.
7) Take 1/2 cup of the hot liquid from the meat pot and slowly add it to the curry-roux mixture, stirring constantly to form a smooth paste.

9) addd salt.
10) Simmer the curry for 20-30 mins, untill the sauce has thickened and the beef and vegies are tender.
11) While the curry is finishing up, cook rice (i just used 5 minute white rice seems to work best for me heh)
Serve the curry with rice is shallow bowls. There should be approx twice as much curry as there is rice in the bowl!
