It's got a name that begins with "T" but I can't be bothered to look it up. Lot's of similar recipes on the web.
3 cups cooked lentils
1 1/2 cup shredded carrot
1 1/2 cup chopped, fresh parsley
3 cloves garlic, diced
1/4 cup Olive oil
Juice from 1 lemon or lime
Salt and pepper to taste
Mix everything together in a large bowl, refrigerate for at least an hour before serving.
