BBQ Ribs

BBQ Ribs
10lbs back ribs
Rub:
2 tbsp coarse kosher salt
4 tbsp dark brown sugar
2 tsp paprika
2 tsp fresh black pepper
1 tsp cayenne pepper
1 tsp cumin
1 tsp onion powder
1 tsp garlic powder
Honey
Start bbq (one with a lid, not a grill), or preheat oven to 250. You want to try and keep the bbq at 225-250 for best results.
Mix all the dry run ingredients up in a plastic bag or bowel, make sure the brown sugar gets spread out. Rub the rub into meaty side of the ribs.
Place on grill with a bit of room between the ribs for smoke\heat to circulate. If using an oven, place meat in a broiling pan or some such to keep the meat out of the grease. Cook 3.5 - 4 hours at 250.
Remove meat from oven\grill, place 6"-8" sections of rib on enough foil to wrap them in. Basically, just cut a section off, and drop it onto the foil. Drizzle some honey on top of the rib section, and wrap it up tight. Place on a cookie sheet or in a shallow baking pan. When you've got them all wrapped, place back in the oven\grill and cook at 350 for 1.5 hours or until done.
As you pull them out of the foil drip the honey\juice mix that's in the foil onto the ribs. No it's not too good for you, but it tastes great.

Wow - I do something very similar to this for my ribs. Our rubs are almost identical!
One thing I do differently, though is to marinade the ribs in beer for about 8-24 hours before hand. I just plop them in a deep bowl with a few bottles of Shiner Bock, poke them with a fork, and let them soak.
Then I put the rub on, and let them sit with the rub on them for about another day prior to cooking. (Or put the rub on in the morning to cook in the evening...)
It's a long process, but when the ribs are done, it's so worth it!

However, I've had the ribs marinating in BBQ sauce and brown sugar for almost 72 hours now. So I'm hoping that it doesn't go too bad...
I did make some pork chops when guests showed up unexpectedly, and did nearly the same thing. Marinated the chops in BBQ sauce for an hour, then added some brown sugar, let marinate for another 30 minutes and then grill them on the BBQ, low heat/slow cook. With the brown sugar added they carmelized perfectly.
We'll see how it works in the oven with the ribs tonight. I'll follow up tomorrow on how it goes.
Any suggestions that anyone wants to make, you've got 8 hours before I toss them in the oven.
