I'm sure iTunes has their own system but the ZenCast beta software has been great for downloading, keeping organized, and synching the casts with my portable MP3 player.
To find the podcasts, I found PodCastAlley to be a good site to locate special interests:

Ease of use is the most important thing for me and the ZenCast software makes it easy to download and synch these things.

There are like 18,000+ different Podcast with daily, weekly or varying broadcasts. Since anyone can create these, they vary in quality as well. It's easy enough to figure out pretty quicky which ones are good. There are also popularity and top ten lists to help narrow it down.
Anyway, I've found listening to these on my way to and from work to my much more interesting than commercials and scant intersting info gleaned from AM Radio.
For the Creative Zen Vision users, the podcasts translate quickly using the ZenCast software but if you want to watch VideoCasts, I highly recommend using Ultra Quicktime Converter (PM me if you need)...only takes a few minutes even for a large file while the Zencast might take 30 mintues or more (that needs some bigtime improment).
Anyways, if you haven't messed around with these, I'd recommend giving some a shot. I didn't expect to be using my Zen Vision primarily for Pod/ZenCasts but that's how it's turned out. (I'm still loving my Zen Vision!)
