I have officially declared today to be Thai food day, enjoy the recipes, but you will have to go to your local asian market and get things like shrimp paste

This dish is normally made with salted Mackerel but I use whole snapper and find it comes out awesome.

Sauce
2 shallots, minced
4 garlic cloves, minced
10 dried thai chilis
3 fresh serrano chilis
1 roma tomato
1 tsp Shrimp Paste
1 tsp fish sauce
1 tbsp fresh lime juice
1 tsp sugar


Fish
1 Small (2#?)Whole fish, be it pompano, "red snapper" or whatever
rice flour
Fish sauce

Veggies
green Beans, frenched
carrots, julienne
onions, julienne

You can make the sauce ahead and it will be better actually on day 2.
brown the garlic, shallots and chilis in some oil, then add the paste and fry it quickly, add the tomato and mash it into the wok making it cook fast fast, then add the fish sauce, lime juice and sugar with 1/2 c water and literally cook it for about 10 seconds (till it comes back to a boil)

Fish
squirt with fish sauce, coat in flur and deep fry

veggies
fry in some oil, add sauce, bring to boil and serve over the top of the fried fish.
