Pan-seared Salmon recipes?

I was bass fishing today with a friend of mine who is a former salmon guide and somehow he managed to bring in a nice 11lb Spring Chinook Salmon on bass gear....was about a 30-minute fight....

Anyway, Spring Chinook(Springer) is the finest tasting of all salmon and I have a big shoulder fillet that he gave me. Any good spicey recipes for me? I don't have a BBQ so am looking to pan-sear this badbitch.

Well keep yer fingers crossed that I can figure out how to catch these damn things on my own and you will have many many fine salmon fillets! :D

Pan seared over some...hrmmm... spring garlic mashed potatoes, maybe morels if you can find em, otherwise go like chive butter sauce, maybe made with wine and vermouth, top it with some microgreens (again if you can find) dressed with just alil olive oil, salt and pepper

Blackened Spring Chinook
Roasted red potatoes w/ garlic/rosemary
Garlic bread


recipe to follow if it comes out right! :D

Microgreens are... and this is going to sound weird, but one step past sprouts. Usually harvested after the first true leaf is formed they are no bigger usually then half your thumb (thumb size may vary). When put into colorful and flavorful mixes you can end up with 15 kinds of lettuce and greens (beets for example have amazing red red) in a tiny fancy looking presentation
