Learning to flip things in a pan

Any good way to practice this sort of thing? I read that using dried beans is a good way, but I'm open to other suggestions. :)

Just do it.... a LOT.

The way I learned was seriously to guy buy a bottle of oil (cheapest kind whatever there is) and 5 dozen eggs.

It's cheap :)

Start with 1 egg and a decent amount of oil, and do it over and over until you can do it without breaking the yolk and on the first try.

Then go to 2 eggs, then 3 ... etc until your 5 dozen is up.

I've heard all sorts of tricks and whatever (such as the dried beans). but I've never found a better way than just practicing - you'll get used to the feel of it, and it just become natural.

I think with Canoe's way you learn quicker... hot oil and all... either that or your hand falls off....

I found it handy to practice with a wok. They are generally heavier and help you get the feel of the necessary motion. I am no expert, but I have no troubles with any wok. Shallower pans I tend to not flip around so much, because I generally don't use them that much for cooking things that benefit from tossing.

try using a few dozen dried beans in a cool pan.

Next move up to eggs, the trick to eggs is to put the yolks, using a swirling action toward the base of the handle (meaning the side with the most whites away from the handle) and then doing the flip, so the yolks travel the shortest distance on the flip and are infinately less likely to break on flippage
