South Beach Diet - Help!

I'm having my family over for a BBQ tonight, and my folks are on that "South Beach Diet". We are having BBQed steaks, but I don't know enough about the restrictions of the diet to find a good recipe for a couple of side dishes and a dessert!

Anyone have some good suggestions/recipes?

PS: Father is highly allergic to onions too, but shallots are ok!

Here's one that I'm actually going to try tonight...It sounded a bit odd at first but the more I think about it the more I think it will be great...the key is going to be getting all the water out of the cauliflower I may even steam it...

Faux Garlic Mashed Potatos

1 medium head cauliflower
1 tablespoon cream cheese, softened
1/4 cup grated Parmesan (use the good stuff)
2 heads of roasted garlic
1/8 teaspoon straight chicken base or bullion
1/8 teaspoon freshly ground black pepper
1/2 teaspoon chopped fresh or dry chives, for garnish
3 tablespoons unsalted butter

Clean and cut cauliflower into small pieces. Cook in boiling water for about 6 minutes, or until well done. Drain well; do not let cool and pat cooked cauliflower very dry between several layers of paper towels.

In a bowl with an immersion blender, or in a food processor, puree the hot cauliflower with the cream cheese, Parmesan, garlic, chicken base, and pepper until almost smooth.

Garnish with chives, and serve hot with pats of butter.

For roasting garlic basically place the heads on foil drizzle with olive oil cover with foil and baked at 375 about 45 minutes to an hour. Then squeeze the individual cloves into a small bowl and mash with a fork.

I really think the peppery flavour of cauliflower will be great with the butter and cheese.

I gather South Beach is a Low Carb Diet?...I'm just making that assumption...:)...Nevertheless this sounds good period...:)

What phase are they in of this diet, I know the carb thing changes by the phase (3 if I remember my stupid diet fad du jour facts)

I am almost positive they are in week 2 (maybe 3). Arb, I'm not familiar with the diet, but I think they can't have potatoes yet right?

Someone correct me if I'm wrong...

Well it's a first 2 weks is phase 1 thing, so it really matters. No carbs at all for 14 days then you reintroduce the right carbs. No fruit either if I remember. Best bet for a BBQ would be Grilled veggies, meats etc, just remember to avoid fruit and carbs (I am going to leave them in phase one for ease)These diets aren't hard to cook for, just boring for those of us that love our side dishes

Faux! I am a little slow I think Arb, sorry :) I just saw potato and thought the wrong thing! Great posting and thank you, I believe I'll use that. Any idea how many it serves?

I'm going to make that and chop up some veggies that I can roast on skewers. Not sure which veggies I'll use but so far I'm thinking:
- baby tomatoes
- mushrooms
- green pepper
- bacon
- broccoli
- shallots

Any drinks you folks think they could have? I know crystal light is one.

I'd say 4-6 servings...dunno really haven't tried it yet...:)
