The best anime series I have ever seen has been Cowboy Bebop. Its story never gets convuluted or too hung up in its style and it has an ending that makes tangible sense without being completely out of context with the rest of the series. You can see it nightly on cartoon networks adult swim, or you can buy the entire DVD series fairly inexpensively. They also made a movie that was excellent as well.
Other ones I recommend, but not as good:
Big O - Also on cartoon network. Great series but totally shit ending.
Reign - Again, sometimes on Cartoon Network. Good series but difficult to get into if you don't know your greek history and philosphy.
Robotech 1 - Laugh all you want, this cartoon was way ahead of its time, especially the first of the three series. There are boxed sets out for this series.
Fist of the North Star - Most violent cartoon ever. The movie is excellent, the series is alright, though both have somewhat week endings and are a bit dated. There was also a live action movie that covered some of the story, but was really only entertaining to fans of the cartoon.
Bubblegum Crisis - Corny, but entertaining.
Dragon Half - Pretty much the funniest parody of anime ever made. Damuramu is the most hilarious villan ever. The Brutal Killer Martial Arts tournament and Dick Saucer's Saucer Special are other highlights. Only problem is that there are only a couple of these out there and you really have to be an anime style junkie to get a lot of the jokes.

Historically, I haven't been much of an anime fan (especially of the giant robot and large-chested bimbo variety), so my taste in this is somewhat skewed, though there is a fair amount that I like. Just a disclaimer, in case my faves here seem pedestrian.
That said, I thought Cowboy Bebop was absolutely amazing. Great series.
I really dig FLCL.
And, then there's everything Studio Ghibli has ever done.

I saw some wierd one about these ultra-depressed ghost hunters one night on Comedy Central late late at night (baby wouldn't sleep). Any idea what it was?
I was reclined with a baby on me and I wasn't leaning forward (and possibly waking her up) to grab the remote just to find the name of some Anime I wasn't too impressed with, but now it's bugging me that I have no idea what it was.

It was probably Witch Hunter Robin. Don't really care for that one personally.
If you can find it - get Macross Zero. It's a prequel to Robotech, and is absofuckinglutely amazing. They're still in production (very slowly) on new episodes - it's currently on 03. I think it's only orderable online at the moment, but if you have BitTorrent...
Last Exile is interesting.
Ghost in the Shell: Stand Alone Complex is good, too - but the new season (2nd Gig) seems a lot more interesting so far than the first.
I'm with the others on Bebop - I would always highly recommend that series to just about anyone.
I've heard about a new series/movie out called Gasaraki (sp?) - I think there was a video game called that. Supposedly makes Macross Zero look bad. Can't find it anywhere, and the only thing I saw about it was in Play magazine - which I don't always agree with.
I thought Spriggan was entertaining - same studio that did Akira, and you can find it for rent at some video stores (I think my Blockbuster has it).
Ninja Scroll? Like the movie, hate the TV show.

Naruto(watched 78 eps of this so far, a fun show about ninjas; both comical and serious)
Full Metal Alchemist(watched 26 eps now, a very cool plot and probably has one of the most dramatic moments in all of anime in it)

FLCL is the best Anime ever. Awesome animation and a wild story that you can watch over and over and find something new. The english voice overs are perfect IMO although the subtitle version is good as well.
As for verylight hearted stuff, Love Hina and Oh My Goddess! are entertaining unless you're looking for robots and space battles.
I couldnt get into Trigun.
I'd recommend FLCL if you've never seen an anime series and want to see an excellent one that's six 30 minute episodes with an outstanding soundtrack. (Also titled Fooly Cooly)

My recomendations as for what I can watch repeatedly:

Rurouni Kenshin (long ass series though...and can drag sometimes)
watching Trigun right now...its base premis is just like Rurouni Kenshin's. I am enjoying it though...just not as much.

FLCL is intentionally hard to follow. After the first episode you should be saying "WTF did I just watch?" After the third episode you may start to settle in and get a grip on some of the characters and after the entire 6 episodes are over you should be saying, "WTF did I just watch?" again.
FLCL is packed with small details that you pick up on after several viewings. I seem to watch the thing once a month or so. I just watched it again after getting my new projector to see it on a 10 foot screen in all its glory.
Each episode sort of has a theme and focuses on a character. The 2nd episode focusing on Mamimi is great.
If you want a cookie cutter plot then FLCL isn't for you.
