I love this on just about anything, meats, fish you name it, feel free to sub bacon for the pancetta ifin you can't find it
Corn Pancetta Relish
6 ea Med Red bell peppers, Diced Small
1.5 # pancetta, cut small small
1 Large Red Onion, diced
3 Bunches Cilantro, picked and chopped
18 Ears Corn, shuck and shave
10 ea Limes, juiced
1 hand ginger, grated fine
Salt and Pepper
Render the pancetta in a small amount of Olive Oil over low heat till it starts to brown, add onion and cook till onions go clear, add peppers and corn and season with salt and pepper until warm, then add ginger and lemon juice, check seasoning and cool on a sheetpan as soon as the lime juice comes back up to a boil.
