I went home for dinner last night and my mom put together a great flank steak dish. She said she got the recipie from a greek friend of hers. I don't have it with me at the moment, but I can get it if anyone's interested. Basically, you marinate a flank steak in olive oil, balsamic vinegar and basil for several hours. Then you cover the top of the steak with pesto and feta cheese. Roll the steak up and tie it. Cook the steak for a short while (I'll get the recipie for this part) and then cut it into several round-rolled pieces (make sure to have it string tied to ensure it stays together). Then fry the cut ends with a small bit of olive oil coating the pan. Cook to desired tenderness and serve with Caesar salad, olives and lavash. One of the best meals I ever had.

Like I said, I'll post the recipie later tonight when I can get home and call my mom about it. However, I wanted to ask what recipies other people have for mediterranian cuisine. Anything that's more authentic than Pasta and Prego (but if you have an authentic marinara recipie, by all means, share :D ). Italian, Greek, Turkish, Armenian, Egyptian whatever.

We like to go to tapas bars to get good mediterranean or moroccan dish ideas. I'm terrible w/ recipes though.

One of the things we really enjoy if we're willing to try it (it can be an expensive mistake) is to make a filet mignon dish. The filet rests on four fig halves and topped w/ a little goat cheese. It's marinated a lightly, like a lamb chop, using little more than rosmary, garlic, and a touch of balsamic. We usually make israeli cous cous as a side for it and use it to make a ring around the filet stack in the center for visual
