I was cooking a butt roast on the BBQ yesterday and didn't have any baked beans around, didn't feel like going to the store and am too lazy to make some from scratch.
This turned out really good:
2 - 12oz cans kidney beans, drained and rinsed
1 chopped yellow onion - roughly 1/2 cup
1 - 12oz can diced tomatos - fresh\diced would probably better, or the canned diced tomatos with the green chilis in them
1 cup KC masterpiece BBQ sauce
(Add smoke flavor if you're not doing it on a grill)
Mix everything up in a Corning Wear or other glass\ceramic oven safe dish (easy clean up). It will turn the outside of the container dark brown if you have a BBQ or smoker as opposed to a grill.
Place inside grill off to the side (not above the coals) uncovered while your wood chips\wood\charchol are still smoking good. I did it with mesquite yesterday, man it was good. Once it starts to bubble around the edges stir, cover and allow to simmer until the onions get just a little bit soft, but still have some crunch left. Remove and do whatever you want, eat, refrigerate, etc...
Need to play with this a bit more, version 1 was very good, but I think it could be better. It takes about 6-8 hours to do a roast in my pit, next time I'll have to do this up front and refrigerate\rewarm it rather than adding wood at the end like I did yesterday.
