Tenu's tortellini salad

Post by Tenuvil »

This is a recipe I made up on my own some time ago and am constantly enhancing.

1 package cheese tortellini (tri colored is best)
1/2 medium onion, chopped
2 cloves garlic, chopped
1 green bell pepper, cut into strips
1 red/yellow bell pepper, cut into strips
1/2 cup fresh mushrooms, chopped
1/8 lb proscuitto, sliced and cut into strips
3 sprigs fresh basil, chopped
1/8 lb mozzarella cheese, cut into strips
Extra virgin olive oil
Balsamic vinegar
Crushed red pepper
Salt
Pepper

Lightly saute onion, garlic, peppers, and mushrooms in a small amount of olive oil. Prepare tortellini per directions on package. Add vegetables and proscuitto to mixing bowl with basil, olive oil, balsamic vinegar, salt, pepper and and crushed red pepper to taste. Drain and cold water rinse tortellini and add to bowl. Mix and chill for 15 minutes. Add mozzarella cheese strips and mix thoroughly. Return to refrigerator and chill thoroughly before serving.

Damnnnn that does sound good, ok but I would leave out the green peppers, I despise green peppers because they are not ripe, but that's one of my pet peeves (cooks in my kitchen always wonder where the green peppers are when they start and get my "we don't serve underripe food" rant). I am going to make this tonight for the staffmeal! :)
