Salad's!

Ok, i'm a huge fan of salads,so i have two here, very different, but both amazing.

Greek Villager's Salad:
-3 ripe tomatoes (the vine ripe ones..if you can)*cut into wedges,6 per tomato.
-2 green bell peppers (seeded) *cut into rings*
-1 Red bell pepper (same as above)
-1 cucumber (peeled)*cut into 1/4 slices*
-4 pepperoncini peppers *you can slice these, or leave whole,if small peppers add more*
-1/2 red onion *just slice it in half, leave it as is, or chop up*
-6 kalamata olives (pitted) *halved*
Dressing for Salad:(put this on at end)
-1 tablespoon extra virgin olive oil
-2 tablespoons Red wine vinegar
-1 teaspoon dried oregano
-1/8 teaspoon salt
-1/8 teaspoon freshly ground pepper
-2 ounces of Feta Cheese (it says 1/2 cup, i usually use most of the feta in the containers they come in) * crumbled*

Serve that with pita bread, make in a pocket, or eat alone.

Secondly,

I never have done this exactly like the recipe says so in the book, and i love my version.

Raw Spinach Salad:
Dressing:
-1 clove garlic (add another if it's a small clove) * quartered*
-1/2 cup olive oil
-1/2 teaspoon salt
-3 tablespoons lemon juice
-1/4 cup cider vinegar * its MUST be cider vinegar*

Salad:
-1lb spinach (clean, rinse,tear into bite size pieces) * about two bunchs, when bought fresh, not packaged*
-6 green onions *slice thinly*
-4 hard boiled eggs *coarsely chopped*
-8 crisp cooked pieces of bacon *try to cook all the fat off the ends, tastes better*
-Dash of pepper

Basically just fix the dressing, mix it, stick it in the fridge. Then make the salad, make sure the raw spinach is cleaned. Throw all the salad ingredients in when ready, and add dressing last. Mix/toss, serve!

They've always been favorites, hope you like em.
EDIT: P.S: Feel free to play around with these two, they're hard to mess up, so do add in and such too. I love avacado with the spinach one...

My Salad of Doom:

(and since you 'mericans use such weird damn measurements, I'm gonna go without - try and adjust)

Salad:
Rocket
Baby Spinach
Crisp bacon in small pieces - not too chunky, use bacon strips and chop them up (mostly used for texture and saltiness, make sure to get rid of as much of the grease as you can)
Sun-dried tomatos in small, thin strips (don't get the cheap ones here)
Apple-smoked cheddar diced in 1/2 inch cubes (you can substitute any good cheese with a lot of taste, but I prefer the apple-smoked kind - whisky cheddar is okay though).
Granny Smith apples, diced (not peeled!)

Dressing:
Apple cider vinegar
Olive oil
Lemon Juice

Simple, and sooooooooo good. The acidity of the apples and the lemon juice goes surprisingly well with the cheese and sundried tomatos.

Edit: ACK! Forgot an important ingredient! Roasted pine nuts! zprinkle them all over that shit!

Lemon juice is always good with the apples, helps keep them from turning brown in addition to the taste.

My wife really enjoys salads. Her favorite is to take a standard green salad w/ tomatoes and the like, add dried cranberries, walnuts, and crumbled feta. Add balsamic and you're good to go.

It's one of the few salads I'll waste my time eating heh.
