Casette -> MP3

Looking for best tips / suggestions on how to do this.
1. Casette Player w/Line Out (or even maybe headphone jack will work?)
2. Plug into Line In of sound card
3. Record with <your preferred software> to WAV's
4. Convert to MP3
I've got a bunch of difference audio apps (Cakewalk, Sound Forge, etc) but I'm curious what everyone's favorites are if you've ever done this.
Thanks in advance for the tips/suggestions.
BTW: It's spoken word that's I'm recording, so no high quality music settings needed, although I need to be able to clearly hear/understand the voice.
