Just substitute the ground beef with soy versions of ground beef.

You could substitute the ground beef with TVP but why in good god's name would you want to. Cuban food > all... Empanadas and pastelitos are the shiznit. For those of you that live in Miami, have you ever been to Las Palmas on 8th? Nothing better than heading there at 2am for a cafecito and some churros.

I agree with Aslana, but TVP should work just fine. However, the instructions were rather disturbing.
Important: Refrigerate the balls for two to four hours before proceeding to the next step. You may also freeze for later use, see "deep frying" note below.

Dude, that's where I go at 2am also! hehe Well, that is if I want Pan con Lechon OR its a week day. If it's Friday or Sat and I want a Pan con Bistec I head over to Sergio's on Bird Rd.

I didn't even know there was a Sergios on Bird. I always went to the one on Coral Way by the old Miracle Center. Is the one on Bird newish?

Nope, the Bird Rd one has been there for years. It's on Bird and like 94th, across from Bird Bowl. They have one now in Kendall (Town and Country mall) and another one in Country Walk 152 ST and 137 Ave.
