Spang's Southwest-ish-style Soup

The Ingredients:

Onion
Celery
Carrots
Garlic
Tomato
Corn
Peas
Cilantro
Portabella mushrooms
Black beans
Tofurky "sausage"
Vegetable broth
Olive oil
Salt
Pepper
Cumin
Paprika
Corn starch

The Instructions:

Heat up some olive oil in a pot
Throw in some chopped onions
Throw in some salt and pepper
Throw in some chopped garlic
Throw in some chopped celery
Throw in some chopped carrots
Throw in some chopped portabella mushrooms
Throw in some more salt and pepper

Let them sweat

Once the onions are translucent, add the vegetable broth
Add celery leaves
Add cilantro
Add salt and pepper
Add corn
Add peas
Add black beans
Add cumin
Add paprika

Cover

Bring to a boil

Simmer

Add the chopped tomatoes
Add the chopped "sausage"

Cover

Add two spoonfuls of corn starch to a bowl
Add water and stir until smooth
Slowly stir result into soup

Cover

Uncover

Eat
