Pork chop and eggplant soup

Made this with a leftover pork chop, some diced pork or ham would be good too.

2 cups chicken broth
3/4 cup (ish) dried eggplant
1/2 cup (ish) diced pork

Place everything in a pot and simmer for 10 minutes, serve.

Eggplant gives it a sort of spicy, slightly bitter taste, was quite tasty.

Nice and simple, I like it. Where does one acquire dried eggplant?

Middle eastern markets carry it, health food up the road from me sells it also.

Krampus brought me a food dryer so this batch was my own.
