Cavatappi with Spinach, Beans and Asiago

Post by Sylvus »

So I've been making some lifestyle changes lately (namely, actually cooking food instead of ordering/dining out every meal) and here's a super-easy, relatively light dish that the old lady and I highly enjoy. If you don't like garlic, you might not want to try it. Or you could just tone down the garlic a bit. It only takes as long as boiling a pot of noodles, and is vegetarian.

8 cups coarsely chopped spinach leaves (I usually do about half a container of baby spinach)
a little more than half of a 1 lb. box of cavatappi (spiral-shaped noodles), cooked and hot
1/2 cup shredded Asiago cheese
2 tablespoons olive oil
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
1 (19-ounce) can cannellini beans or other white beans, drained
2 garlic cloves, crushed
Cracked black pepper (optional)

Combine first 8 ingredients in a large bowl; toss well. HOOKERWHORESLUT (yeah HOOKER THE WHORES AND SLUTS) with cracked black pepper if desired.

Don't know how healthy it is supposed to be but a few chunks of good stick (not sliced) pepperoni would be the bomb in that, sausage=good but something in it screams good pepperoni to my head.

I make a dish extremely similar to that, and it is great. All the garlic is a must. To that recipe (lols i even use cavatappi at times) I add chicken (because im a man) and sundried tomatoes. That is good stuff.
