Lemon pepper chicken

Mashup of a couple recipes:

Zest + juice from 3 Lemons
1/8 cup olive oil
1 1/2 tsp fresh black pepper
1 tsp kosher salt
2 cloves garlic, smashed & diced fine
1/8 cup finely chopped onion or onion powder to taste, don't use 1/8 cup onion powder
Small-medium size roasting chicken

Mix all ingredients except chicken together in a small bowl and set aside.

Pre-heat oven to whatever you normally roast a chicken at, we do 425 for 30 minutes then 350 for another 30 or until done in a covered, cast aluminum roaster. Last 15 minutes uncovered to brown the skin.

Remove giblets if they're included and rinse out\pat dry the chicken. Put the chicken on a cutting board or something and work your hand in under the skin, separating it from the breasts and legs. A helper is handy for this part, stand the chicken up so the end you just opened is upwards, and begin working the lemon pepper mix into the area you've opened. Once you've gotten the lemon pepper mix all you can inside, set the chicken in the roaster and gently wipe any that's left on the outside of the skin.

Cook as described above.

Next time I'm going to add some curry powder & coconut milk to the lemon pepper mixture.

Adding 1 tbsp of madras curry powder was a splendiferous idea. Damn that was good.

I'd love to have an air freshener of that smell :)

Did the curry make it overly spicey? I can handle it but I don't want to be eating left overs all week because the family can't.

It had the flavor but no bite really, the wife loved it and she complains about regular brauts being too spicy.

Might want to start at a tsp that if you've got family that doesn't care for spicy stuff.

I could quite easily eat it all week, the chicken fat\olive oil in the bottom of the pan was fantastic on rice.

Made it with limes as I had them around, good but not quite as good as with lemons. Lime zest doesn't have the bite that lemon does.
