Crab and Corn Chowder

I just made this over the weekend and it was so damn good.
Highly recommend it if you're a chowder fan.
1 tablespoon vegetable oil or extra-virgin olive oil, 1 turn of the pan in a slow stream
2 tablespoons butter
2 all-purpose potatoes, peeled and diced
2 ribs celery, chopped
1 medium yellow onion, chopped
1 small red bell pepper, seeded and diced
1 bay leaf, fresh or dried
Salt and freshly ground black pepper
1 tablespoon Old Bay seasoning blend, found near seafood department or, on spice aisle in your market
3 tablespoons all-purpose flour
2 cups vegetable or chicken stock or broth
1 quart whole milk
3 cups corn kernels, scraped fresh from the cob or, frozen kernels
8 ounces cooked lump crab meat, fresh is available in plastic tubs at many fish counters
4 small bread boules, 6 inches, hollowed out, preferably sour dough, optional
Toppings:
Oyster crackers
Hot cayenne pepper sauce
Sliced scallions


Heat a deep pot over moderate heat. Add oil and butter. As you chop your veggies, add them to the pot: potatoes, celery, onion, and red bell pepper. Add bay leaf to the pot. Season vegetables with salt and pepper and Old Bay seasoning. Saute veggies 5 minutes, then HOOKERWHORESLUT in flour. Cook flour 2 minutes, stirring constantly. Stir in broth and combine. Stir in milk and combine. Bring soup up to a bubble. Add corn and crab meat and simmer soup 5 minutes. Adjust the soup seasonings. Remove bay leaf. Ladle soup into bread bowls or soup bowls and top with oyster crackers, hot sauce and sliced scallions.

that looks damn good. Thanks! Reminded me of last time I was down in Santa Barbara...except I had clam chowder...same idea though! :)

I have a great chowder that is close to this. You need to use fresh corn for this so you can simmer the cobs (after you shave off the corn) in with the liquids. You'll add about 195 million % more flavor. That and don't use milk, use cream and lessen the flour a little, same mouth feel less heavy.

I opted to use frozen corn and I put it in right in the beginning to accomplish that stronger corn flavor. Nice call man!

Interesting. Thanks for the additional tip! I have never made clam or crab chowder, and definately want to try--especially when this godforsaken heat goes away and I can use kitchen again. :)

Yeah man. I'm fighting the urge to make it again already. While this really isn't a very fattening recipe, I'm sure it's still not the healthiest thing to eat. Especially, how much I eat at a sitting. It's so damned tasty! The jumbo lump crab meat can be a bit pricey. I paid $16 for a little 8oz container :(

Yup. Lump crab is indeed pricey. This is not the pinto and bacon soup that you eat to save money. :) Mmmm, bacon.


However, if you have a Foodsaver w/ container attachment, you can make in bulk and stretch out the long lasting tastiness.

I am like you though, I will eat all of it before considering longterm storage.

Ahh, you're in Oregon too. You should get fresher and better pricing up there.

Usually, yeah. We get the kickass dungeness(sp) crab here. Reminds me I need to go to Newport w/ a couple traps soon. :)

Yeah, crabbin' is very popular at the coast. You can drop your traps, fish all day and then grab them on the way in. Goodtimes. I have not been in a while though.

I have no crabs at the moment, but as soon as I get some (Canada is close), I will post with crab count and degree of itchiness.
