Buenos nachos. I came up with this marinade for carne asada a few years back and figured I would share. Carne Asada is thinly sliced steak that is marinated then grilled for serving in burritos, tacos, etc.
Here is the list of ingredients for marinade:
2 Fresh Jalepenos - Chopped roughly
6 Cloves Garlic (smashed with flat of knife, no need to chop)
2 Limes
~20 oz beer (I use a good dark ale like sierra nevada. Cheapass Mexican beer works fine though i.e. corona)
2 LB Skirt Steak
1/4 CUP Lea & Perrins Worchiwhathaveya sauce(never can say that right)
Seasoned Salt
crushed black pepper
crushed red pepper
Take the salt and both types of pepper and s*p*r*i*n*k*l*e over all sides of the meat, gently rub it in. Let that sit in the fridge for 10 minutes while you prepare the rest of the marinade.
In a large ziploc freezer bag( I use the kind that stand on their own), combine all other ingredients except for the limes.
Cut limes in half and crush them into the bag throwing the rinds in as well.
Close bag, mix marinade well.
Place the meat in the bag and seal it, leaving as little air as possible in bag.
Marinate in refrigerator for 1-2 hours.
Get yer BBQ hot.
Remove meat from fridge and discard marinade, let meat get to room temperature.
Cook steak on hottest part of the grill. Turn after a few minutes as it will cook quick.
After cooking, chop it all up and serve on warm corn tortillas with diced onion, cilantro and your favorite salsa.
