It does lead to the question of why they didn't just hop on the eagles in the first place to fly to the mountain, get off drop the ring in, then head back for some celebratory hobbit sex0r?

Because if Gandalf had touched the ring, he would have been corrupted.
Plus this is a story about the redemption of mortals and the ending of the age of magic.
