New Years Challenge

This year i am in charge of the new years menu for about 10 friends, but i must admit I am a little short on inspiration. What I need is a 3 course menu, and what i am looking fror here is some suggestions and inspiration.

Preferably something a little untraditional if anyone has any ideas.

stolen from the menu of the last restaurant I worked at, it's creole food for the most part.. might give you some ideas

(sorry for the caps)

HALIBUT WITH CRISPY POTATO CRUST,
ROSEMARY SHRIMP, AND ROASTED RED PEPPER SAUCE


SHRIMP-CRUSTED SEABASS
WITH BABY SPINACH, MUSTARD, AND SWEET POTATO CRISPS


NEW MEXICAN PAN-ROASTED HALIBUT WITH ROASTED TORTILLA SAUCE,

Well, the proteine is free really, I am game for anything.

And I consider myself a pretty skilled cook, so I can go advanced, but not like extremely advanced. Is that what you were after Pherr?

Will see if i can find a place for those recipes, trouble is it's hard to get the spices and whatnot you need for cajun food over here.

ok, Pairing Menu


Snacks:
Blini, Osetra, creme, chives
A nice cows milk mildish brie
no strongly flavored crackers, but crackers


Cornmeal Dusted Fried Oysters, Salsa Verde (The Italian one)
Nicholas Fuilliente brut (and who cares if I spelled "nicky f" wrong :p)

Seared Dayboat Scallops on a warm spinach salad (lemon juice for the acid) and Salmon Roe (green red... holidays... you get the idea)
H Billiot Brut Rose

Fois Gras Stuffed Pheasant, Barley Risotto, Baby Carrots and Black Truffle Jus
Some Damn good Burgundy should go here, but that can get pricey, if you want go Rhone, maybe Alain Graillot Crozes Hermitage (should be like 18 a bottle)

Follow this with a Lemon Sorbetto to clean the palate of the pinot and then drink more bubbles... because it's about the bubbles

This recipe can be adjusted to feed as many as you wish. Just add more squirrels.

Thanks for the suggestions Pherr, seems that any kind of seafood is completely out of the question and also cheese that isn't already "in the food" never knew those people were so picky eaters, bastards.

You have any suggestions that may be a little more "traditional"? =)

Bah Baked Ham with Fruit Syrup, Blackeyed Peas (with a dime for luck), Corn on the Cob, Green Beans, Yeast Rolls...:)

How about a Mexican thing? Carne Asada, Pollo asada, roasted peppers and onions, tortillas, marg's, etc...

Or... Carnitas! Pulled carnitas pork with some fresh tomato salsa on little toasties or homemade tortilla chips... :)

Yep, we got squirrels. Got some living in the trees at work, guess i can try to catch one to see how it taste.

Actually, it is not that bad. :D

For the sake of the thread though, I would not recommend squirrel since it sounds like the guests are all picky. :)

if you are gonna do a roast, do a prime rib, it's everyones guilty pleasure... nice slow cooked prime, horseradish mashed taters, maybe some creamed spinach with pancetta and pernod...

It's actually mainly one of the guests that is really picky, guy is insane and it bothers the crap out of me. The prime rib ideas sound good, i will see what I can dig up there.
