My gf has developed a nasty gluten allergy and as a result can't consume anything with wheat gluten in it. This includes, surprisingly, "modified food starch" (which is usually made from wheat products) or soy sauce (which has more wheat than soy in the US per ingredient labels).
Does anyone else here have this problem and can you recommend any good alternatives to wheat and flour?

A friend of mine's girlfriend has a similar problem, though I think she's barred from eating certain other foods, too. Her solution is to eat a whole lot of asian food, much of which apparenlty has little to no wheat gluten.
You might look for different types of soy sauce, too. As I understood it, she could eat certain imported types, but not locally marketed types... Beats me...

My father has been allergic to wheat for 20 years or so (as well as a long laundry list of other foods) and has learned to adapt.
Spelt is low in gluten and there are a lot of products out these days using spelt. Its a godsend for my father. Your friend should check out local health food stores, maybe talk to them about the allergy. The lady than runs the shop my dad goes to told him about a local bakery that made fresh spelt bread.
Beyond that, its just a matter of creative substitution.
