Butternut squash!

I have one I am not sure what to do with, so if anyone have any suggestions I would be happy to take them =)

You could also bean a random person in the head with it out on the street. That always ends well :)

Peel and dice then nuke 'til soft. Serve w\ brown sugar or honey.

Wife halves bakes them with a couple tbsp of brown sugar in each side, nummy.

I second butternut squash soup - it's excellent, but you really need 2-3 to do a good size soup.

The easiest way to prepare butternut (or acorn) squash which I've loved since I was a kid -

Baked Squash:

Halve the squash lengthwise and scoop out the seeds with a spoon -

Put in a glass (or ceramic) baking dish - skin side down.

Put about an 1 inch of water in the dish, not high enough to go over the top of the squash!

Spread a couple tabs of butter, a few tbs of brown sugar, and if you like it really sweet, drizzle some maple syrup over both halves.

Bake on 350ish for about 45 minutes, until the squash is turning golden brown and softened up.

When done you can either serve the halves whole and let the people eating it scoop it out themselves as they go, or you can scoop it out and serve it that way.

Seed squash, reserve the scooped out seeds
steam halved & seeded squash
sweat chalottes in butter. Mix in seeds and other outscooped goodness. Cook for 3-4 minutes or until slightly brown. Sieve, reserving the liquid and tossing the rest (you can skip this part, not adding the seeds and just blending the onions with the squash)
scoop out flesh of squash, blend with chalotte-liquid, cream, a bit of dark brown sugar and a little nutmeg. serve with croutons.
