What do you do to care for your cooking knives?

I was just wondering, I personally do the normal, sharpen them once in a while, always wash them by hand and oil them occasionally as well. Was wondering what else you guys do?

Sharpen them once in a while and almost always wash them by hand. That's about it. I don't use hard surfaced cutting boards.

I didn't put that in, since it really goes without saying, anyone who cares about their knives do that!

Wooden magnet strip, steel every time I use it, sharpen & strop every few weeks, never in the dishwasher, don't cut bone or on glass/metal, dry off as soon as cleaned. P. much it.

This is what I use mostly, btw:

my wustof classics were bought for cutting. everything and anything, bone or not. steel every time it comes out, and then before it goes back after a hand wash. my knives get used. Ceramic kit when it needs an edge freshening. the 9" chef's knife that I use most is like 10 yrs old now, may need a new one in another 5 yrs.

On another note, I have like an $8 santuko knife from marshall's that I sharpened to a fine killing/cutting machine. It does the work too, and I don't have to care about that one so much. It is a thinner knife, so its edge dulls fast though.

For the amount of cooking I do(and enjoy), my knives are embarassingly bad. I hone the ones I use once a week but they stink.
