Oven Fries

As a change of pace I've begun mixing these into what's become a "starch rotation" at mealtimes. Lot of recipes on the net, this is what I've come to like.

1 small potato per person
1 medium onion - optional
Olive oil
Hungarian Paprika
Granulated garlic
Granulated onion
Black pepper
Cayenne pepper - optional

Large bowl
Flat sheet pan(s)
Cooking grate\rack if you have one

Preheat oven to 425

Slice potatoes into 3\8" square fries - I just scrub them leaving the peel on. If desired, cut the onion in half and make 3\8" strips out of it.

Place potatoes and onions into bowl, drizzle with olive oil, toss until they're covered, adding more oil if needed. Dust with spices to taste, I like a lot of paprika on them. Toss some more until evenly coated with spices.

Spray pan with cooking oil and spread fries on pan allowing room between them for heat to circulate. If you have one, a grate of some sort like you'd grill fish on keeps them up off the pan and they cook more evenly. Place into oven, cook for 25 minutes, flipping halfway through (not needed on a grate).
